The Best Vegan Waffles

Looking for a weekend treat, or surprising your loved ones with a homemade Sunday Brunch? Then this waffle recipe will keep them satisfied. I chose a combination of flours as I found it to have the nicest texture (soft and fluffy on the inside, yet crispy on the outside).

Grab your waffle maker, get it heating and start preparing your batter! Ingredients: (makes 2 waffles)

- 50g oat flour

- 50g plain flour

- 25g coconut flour

- 1tsp baking powder

- 1tbsp melted coconut oil

- 2tbsp agave syrup (or sweetener of choice)

- 250ml non-dairy milk (i like oat milk)

- 1tsp apple cider vinegar


1. Whisk together the milk and vinegar to form a 'butter'milk and set aside for a few minutes.

2. Meanwhile, stir together the dry ingredients in a large bowl.

3. Whisk oil and syrup into your 'butter'milk and pour into the dry ingredients.

4. Stir well, adding a bit more milk if necessary, to form a nice smooth batter.

5. Pour half the mixture into your preheated waffle maker and cook for around 10 minutes. Serve with your desired toppings.
