Now, have you heard of a Brookie before? I was surprised that not everyone has, so for those who don't know what these are - its a double whammy of brownies and cookies put together. In other terms: pure heaven.
These use a similar cookie recipe to my Butterscotch Cookies (also on my blog) layered on top of a dark chocolatey cake layer. Please dig in! Ingredients: 8 brookies
Brownie layer:
- 75g brown sugar
- 70g wholemeal flour
- 30g cacao powder
- 3/4tsp baking powder
- 1/4tsp salt
- 3tbsp vegetable oil
- 6tbsp soy milk
Cookie layer:
- 80g plain flour
- 40g Natures Charm butterscotch syrup
- 2tbsp vegetable oil
- 25g light brown sugar
- 2tbsp soy milk
1. Preheat oven to 170C. In a large bowl, mix together the brownie ingredients until combined. Spread into a small square cake tin (greased and lined).
2. In a separate/clean bowl, mix together the ingredients for the cookies. Spread this mixture evenly over the top of the brownie mixture.
3. Bake in the oven for around 25minutes until firm but still slightly gooey in the brownie layer.
4. Allow to cool completely before serving!
