It's been a while since a savoury recipe has been posted on here, so I thought it was about time I tried something new - since I have definitely been digging savoury over sweet lately (shocker!). I had some leftover cauliflower 'rice' from another meal that I wanted to use up, and what a better way than making some arancini balls - replacing normal rice for cauliflower to get in some hidden veggies! I used the air fryer for cooking, but alternatively you could bake in the oven or shallow fry in a pan! They go perfectly with a tomato sauce and make a good appetiser, or light lunch option, any day of the week.
Ingredients: (makes 12)
- 200g cauliflower rice (FullGreen pouches are ideal)
- 4tbsp gram flour
- 1-2 tbsp nutritional yeast
- 1tsp garlic paste
- handful of chopped parsley
- salt and pepper to season
- 2 slices of stale bread for breadcrumbs (pulse in blender)
1. Simply combine the cauliflower rice, parsley and nutritional yeast in a bowl. In a small saucer mix the gram flour and garlic with enough water to form a sticky paste.
2. Stir in the paste to the bowl of rice until the mixtures starts to bind (if you added too much water, add in more flour, or vice versa).
3. Using your hands, form small balls and coat in the breadcrumbs. Set aside and repeat with the rest.
4. Cook for around 20min at 200C in the air fryer.
5. Serve with a ready made tomato marinara sauce.
