Ever used to love a peanut M&M? Miss the little bites of delight? Well now Miiro have their chocolate coated peanut hearts you never have to miss out.
I recently was craving some truffles so when I was creating this batch of smooth, cake like, bites I thought why not add one little peanut heart to each centre - completely optional of course but I would recommend!
Ingredients: (makes 12)
original recipe adapted from bnutz.com
60g sweet potato, cooked and mashed
100g chocolate hazelnut spread (eg. vego)
60g chocolate vegan protein
2tbsp (15g) cacao powder
pinch of salt
5tbsp almond milk
12 Miiro chocolate coated peanut hearts
100g dark chocolate, melted
In a blender mix together the sweet potato, spread, protein, cacao and salt until combined. Transfer to a bowl.
Mix with milk - drop by drop, to form a firm dough. Shape into 12 balls and add a peanut heart to each centre.
Melt the chocolate, working quickly toss each ball to coat and transfer to a lined tray to keep in the fridge. At this stage, add any desired toppings such as freeze dried strawberries or desiccated coconut.
Once set (1-2h) you can enjoy, or store in an airtight container in the fridge for up to 1-2 weeks!
