Creamy Coconut Red Lentil Dahl

Looking for a wholesome meal which is rich in flavour, protein, fibre and full of goodness to keep your immune system tip top in this time of year? Then this creamy dahl with added in coconut milk will keep you in check! Serve alongside some rice and/or roti, naan, chapati etc. for a complete delicious meal!




Ingredients: (serves 2-3)

- ½ onion, diced

- 1tbsp garlic paste

- 1tbsp grated ginger

- 1tsp cumin

- 1tsp spicy coriander

- 1/2tsp cayenne pepper

- 1/2tsp turmeric

- 2tsp garam masala

- Salt and pepper

- 240g dry red lentils

- 100g mushrooms

- ½ tinned chopped tomatoes

- spinach

- 1+1/2C water

- 1/2C Natures Charm evaporated coconut milk

- Fresh chilli and coriander to serve

- Roti/naan to serve

1. Fry the onion, mushrooms, garlic and ginger in a large, non-stick pan with a dash of oil.

2. Once browned, add the spices and fry for a further 3-5 minutes, until fragrant. Meanwhile, rinse and wash the dry lentils.

3. Add the lentils to the pan and stir. Next add the tomatoes and water. Bring to a gentle simmer, cover with a lid for approximately 20minutes until lentils are soft and soaked up all the water.

4. Remove lid and stir in the coconut milk. Simmer for a further 10 minutes until thickened.

5. Stir in the spinach and wilt whilst you warm roti/naan in the oven.

6. Serve immediately, topped with fresh chilli and coriander if desired.
