I don't know about you, but during this period of social distancing and working from home I have loved spending more time making meals and creating delicious food for me and my boyfriend to eat. We all know I love ramen, I love noodles, I love tahini and I LOVE chilli - so what could be better than all this in one bowl?
This Dan Dan inspired sesame noodle bowl is so rich and delicious, you will be surprised at how easy it is to put together!
Ingredients: Serves 2
Sesame Broth:
- 2-3tbsp smooth dark tahini
- 200ml vegetable stock
- 1tbsp mirin
- 1tbsp soy sauce
- 1tbsp chilli oil (sub sesame if desired)
- 1tsp sriracha
- 1tsp garlic paste
- 1/4tsp ginger
- 1tbsp soy sauce
- 1 spring onion, sliced
- 150g soy 'chicken' chunks (or any protein alternative; tofu works well!)
-150g soba noodles
- 2 heads pak choy
- 1/2 cucumber, sliced
1. In a pan, heat some oil and fry the garlic, ginger and onion for 1-2 minutes until fragrant.
2. Add in the soy chunks, with a tbsp soy sauce and fry until browned (approximately 5 minutes).
3. Meanwhile, mix together the broth ingredients in a small jug, using hot vegetable stock. Cook noodles according to instructions, adding in the pak choy for the last minute of cooking.
4. Divide noodles and pak choy into two bowls, pour over the sesame broth and top with the cooked 'chicken' pieces and cucumber. Serve immediately with some fresh chilli and stir in some hot chilli paste if desired.
(top tip: make extra sauce and store in the fridge for lunch the next day)
