Gingerbread Men (gluten-free option)

It's December! This means a month full of festive baking and recipes to have fun with in the kitchen (I am sure your instagram feed is full of them by now) - and I am totally digging this!

My first festive baking had to be my fave christmassy treat which is gingerbread! I love all things ginger, and when you have a cute gingerbread man cookie to dunk in your tea life is bliss.. This recipe is straight forward, easy to make and needs little culinary skills. You can make it gluten-free using buckwheat or spelt flour, or if not then any flour will do! (I've made them with rye flour and it is a personal fave of mine!).


Ingredients: 6-8 men

- 1/2C (70g) non-dairy butter

- 2tbsp dark agave syrup (sub maple)

- (2C) (200g) flour of choice

- 2/3C (70g) brown sugar

- 1tsp baking powder

- 3tsp ginger

- 1.5tsp cinnamon

- 1tsp nutmeg


1. Preheat oven to 170C. Melt butter and syrup in the microwave.

2. In a large mixing bowl, mix all the dry ingredients together. Stir in the butter and syrup mix until a thick dough forms.

3. Transfer to the fridge for 15 minutes, before rolling and cutting out your men on a clean work surface.

4. Transfer to 2 lined baking trays and bake in the oven for 15minutes. Allow to cool before icing.
