Miniature Lemon Galaxy Tarts

This recipe was created using Natures Charm coconut condensed milk, allowing vegans and non-dairy people alike to now enjoy their childhood condensed milk once again.


Ingredients: (makes 4 miniature or 1 large tart)

- 100g coconut flour

- 50g oat flour

- 2tbsp coconut oil, melted

- 6tbsp agave syrup (or sweetener of choice)

- 1 can coconut condensed milk

- Juice and zest of 1 lemon

- Butterfly pea powder for galaxy swirl (optional)


1. In a food processor, combine flours, oils and syrup until a sticky crumbly mixture forms.

2. Grease your tart tins and tightly press crust mixture into each tin, making sure there are no gaps. Chill in the fridge for 1-2hrs.

3. In a small bowl, mix condensed milk, lemon juice and set until white in colour. When tarts have chilled, remove from the fridge and pour mixture equally into each tin.

4. If using the butterfly pea powder, swirl around a cocktail stick, dipped in the powder, in each filled tart.

5. Return to the fridge for at least 4hrs (preferably overnight). Remove tart from the pan delicately, serve and eat immediately.
