Salted Pretzel Brownies

Who doesn't love a good brownie? Whether it be peanut butter stuffed, party ring topped or a simple dark chocolate sea salt - brownies ALWAYS do the trick for an afternoon treat. But have you tried pretzel brownies?

I recently got gifted some delicious salted pretzel thins by Olly Olly's and immediately had inspiration to get baking with them. Check out the recipe below and let me know if you approve to pretzels and brownies together!



Ingredients (makes 16):

- 240g self raising flour

- 100g dairy free spread (eg. vitalite)

- 60g cacao powder

- 100g sugar or sweetener alternative

- 50g brown muscovado sugar

- 1 cup (250ml) non-dairy milk

- pinch of salt

- 1/2 tsp baking soda

- 40g dark chocolate chips

- 1 pack (35g) salted pretzels


Method:

  1. Preheat oven to 170C (fan) and line a large square baking tin with parchment.

  2. In a large mixing bowl, beat together the 'butter', sugars and salt until smooth. Add in the flour, cacao, milk and baking soda and mix until a thick batter forms.

  3. Fold in the chocolate chips and half of the salted pretzels (crumbled) - saving 8 to use as toppings!

  4. Pour into the cake tin and spread evenly. Halve your remaining pretzels and arrange them on top.

  5. Bake in the oven for approximately 20-25 minutes until a skewer comes out clean! Allow to cool before transferring to a wire rack and slicing.
