I think it is safe to say that this little side dish is extremely popular alongside sushi, but often people lack the ambition to make it themselves. Here is an easy, authentic method for you to feel like a culinary genius at home!
Ingredients: Serves 2-4
- 30g dried seaweed salad mix (eg. wakamame, hijiki etc)
- 1 large carrot, thinly sliced
- 1 cup edamame beans (shelled)
- 3tbsp toasted sesame oil
- 2tbsp soy sauce
- 2tbsp mirin
- 1/2tsp salt
- 4 tsp toasted sesame seeds for sprinkling
1. Rinse your seaweed in cold water, in a bowl let it soak in clean water for 15 minutes.
2. Meanwhile, make the dressing by mixing together the oil, soy, mirin and salt.
3. Drain the seaweed and squeeze to remove excess water. Add to a bowl with the edamame and carrots before pouring over the sauce and tossing well.
5. Serve with a sprinkling of sesame seeds or store in the fridge for 1-2 days.
