We all seem to be a bit obsessed with baking lately, with flour hard to find on the shelves. However, I have noticed a lot of vegan baking recipes can be quite 'bougie' and use expensive / hard to find ingredients.
That's why, I have teamed up with Aldi UK to give to you a simple CHEAP recipe which is delicious and also semi-healthy for a perfect afternoon addition to your cup of tea.
You can purchase all ingredients from Aldi for under £5 & they are all easy to get hold of!
Ingredients:
- 1 (120g) large banana
- 50g granulated sugar
- 150g oats
- 40g mixed seed mix
- 60g dried cranberries
- 50g margarine/sunflower spread
Method:
Preheat the oven to 180C. Mix together all dry ingredients in a large mixing bowl. Mash the banana and add.
Melt the margarine in a microwave for around 20 seconds before mixing in to the bowl to form your mixture.
Line a wide loaf tin with parchment paper and evenly spread the oat-y mix in.
Bake in the oven for approximately 20-30mins until browned on top. Allow to cool before slicing.
