Vegan 'Twix' Bites

Beware when you make these... They are incredibly moreish and may be gone within seconds... These little bites are the best snack to have on hand; they satisfy your choccy cravings, taste indulgent, fuels you with energy yet are incredibly 'healthy' (well kind of...). Each bite contains 5g protein! So perfect for a post workout treat, if you are about that life.

Base:

- 1/4C (30g) coconut flour

- 1/4C (30g) plain flour

- 1/4C (25g) vegan vanilla protein powder (sub for almond meal/more coconut flour)

- 1/4C (60g) syrup/sweetener of choice

- 2tbsp vegetable oil

Peanut caramel:

- 4tbsp (60g) peanut butter

- 2tbsp (30g) syrup/sweetener of choice


- 50g melted dark chocolate (70-80%), for coating


1. Preheat oven to 175C. In a bowl, mix together the base ingredients until a crumbly biscuit dough forms.

2. Tightly press into 10 small round balls, and press onto a lined baking tray (be careful as the mixture is delicate/crumby). Bake in the oven for 6-8min until lightly browned.

3. As you allow biscuits to cool completely, mix together the PB and syrup.

4. Spread a spoonful of peanut caramel onto each biscuit and coat in the melted chocolate. Chill in the fridge for around 30min-1hr until set.

5. They are now ready to enjoy! They will last approx. 5 days and I recommend keeping them in the fridge but will keep at room temperature if you want a lunch-box snack for work/school.
